Mug Cakes - Do They Really Work? | Just Add Ginger

The day of my dinner party, our oven was condemned! It was an absolute potential disaster situation - not just for the event, but also because at that point we didn't have a definite moving date. Thankfully. Ryan rescued the dinner party menu by cooking on a camping stove, but it got me thinking about baking. Not a dedicated cake maker, but with the inclination to dabble and tap into my inner Mary Berry, would it be possible to indulge my sweet tooth without an oven. With mug cakes having been on my radar for a while, I knew that it was something I just had to give a go. 

Not wanting to dive into the deep end and start guessing, I decided to follow a reputable recipe, and chose this one from the BBC Good Food website. The steps seemed simple enough to follow, and with a shiny new microwave on my side, one weekend, finding myself with some time on my hands, I collected the ingredients, swept my hair off my face, and got my baking hat on. 

In principle, the cake should have been easy enough to make. There were however some ever so slight hiccups along the way that I didn't initially factor into the equation. Firstly, making the switch from mixing bowl to mug was a little tricky when it came to mixing ingredients. It was nearly impossible to see if everything was mixed thoroughly, and initially really difficult to decide on just what to use to combine everything. A wooden or silicone spoon is my usual weapon of choice, but these were far too big for the mug, so instead a metal dessert spoon seemed appropriate. Whilst this seemed to be just the ticket at first, it soon became clear that everything was going to get stuck to the surface of the spoon, so I had to periodically stop and shake the mixture back into the mug. Not an arduous task, but one that definitely made whipping up the mixture a little longer than expected.

The second hitch was getting the timings right for the mug cake. The recipe and method indicated that in between 4 and 5 minutes should be adequate for the cake to cook sufficiently. However, without a large surface area for the mixture, deciding whether the cake was done all the way through was quite hard to deduce, resulting in me "over-baking" slightly. I think if I had known the microwave a little better this wouldn't have been so much of an issue, but this being the first time I had used it, things were not on my side.

However, when the cake finally emerged from the microwave I was really surprised to see how well-risen it was, and, more importantly, how much it actually tasted like a cake! The texture was a little dry, but there were fluffier patches, and the chocolate chips that I had added were dispersed pretty evenly. It was the perfect portion size for Ryan and I to share too without either of us feeling too naughty about it.

Hiccups aside, I think that the concept of making microwavable mug cakes is really smart. To an extent, it is incredibly child-friendly and easy to do - the perfect rainy day activity. They would also be really fun to whip up if you have somebody pop round for a cup of tea and you don't want to go overboard with providing too many accompanying sweet treats. With a recipe that I think must be quite universal, it also means that you can experiment easily with flavour combination (I'm tempted to try a Rocky Road inspired concoction next). And most importantly, you don't need an oven at all! So if you ever find yourself in a similar situation to us, you can still get your baking fix in a few simple steps.

Cook with Ginger: Pasta Perfection


Bon Soir Universe! 


After putting it off for nearly a week, today I embarked on my first giant home-cooking session since I got back from my holiday! 


Shocking...I know! 


At lunchtime, I cooked a recipe found in Jamie's 30 Minute Meals . 


I had it on good authority that it is an amazing dish... 


And it did not disappoint!! 







Yes...I am aware that it doesn't look very appetising at this point (a bit like mush), but stay with me!







I've added tomatoes now - much better colour!! By this stage it smelt amazing too!! 


Et Voila!!! 

There was loads left over after my lunch, so I'm saving it for tomorrow to take round to my friend's house to eat!

I'm sure there's a video on the internet somewhere with this recipe (Jamie Oliver did a TV series in the UK based on his book.) 

I was so impressed, I had to Instagram!

Cook with Ginger: Black Bean Beauty

Bonjour Universe! 


Woah!
Today has been absolutely MAD, and it's not even 1pm yet! 
What is going on!? 


I have good news....


I have a card reader again! 


Yippppeeee!!! 


So, here is the post I wanted to put up yesterday....it's here, finally!!!





On Saturday, I decided to try out a black bean dish...I fell in love with the sauce when I was away and was itching for another taste! 


It was so easy to make! Literally all I did was get some diced chicken, chopped some mushrooms and onions, bought some Straight-to-Wok noodles and some Black Bean sauce and threw it all together with some salt and pepper! 


The results were AMAZING!!!

Et Voila!!! 


This dish is going to quickly become my new obsession!!!


Seriously, you need to try it!!

Cook with Ginger: Pork, Apricot and Celery Burgers

Bonjour Universe!

I am ALWAYS looking for new recipes to try that are simple, quick, and make me go "Nom nom"!

The flavours in this recipe were inspired by the stuffing that I had at a roast dinner my friend cooked me last week, and the recipe itself from an old favourite (found here.) I kind of improvised a teeny bit, but it turned out really well, and was cooked in under 20 minutes, so perfect for a quick lunchtime bite!

I used pork mince, a stick of celery, and a handful of dried apricots as the main ingredients for this dish, and it was d-eeeelicious!





I whizzed the dry ingredients up in a blender for speed. I cannot praise the blender enough if you are in a hurry...it saves SO much time and means that I can fix myself something nutritious and yummy in a flash!




I decided to grill my burgers...it's a lot healthier, and considering I spent most of the morning shoving chocolate in my mouth, I thought I could do with being a bit more careful about what I had for lunch!




This meal can be cooked in under 30 minutes, so even if you are in a rush or can't be bothered to cook something...YOU HAVE NO EXCUSE!!! You can eat them with salad, with beans, with just a burger bun...

Cook with Ginger: Cheater's Chicken Korma

Bonjour Universe!

I have a little bit of time before I set out to work again, so I wanted to share what I had for my dinner last night. Even though I LOVE cooking, sometimes during the weeks I need a quick fix, and this korma is so easy to do,

What you need:
  • 500g diced chicken breast
  • Olive oil
  • 500g ready made korma sauce
  • Small can of coconut milk
  • Thumb sized piece of chopped ginger
  • 1 diced onion
  • Diced mushrooms (optional)
  • Salt and pepper
  • Flaked almonds
  • Naan bread
  • Cinnamon
  • Fennel Seeds





Step One
Fry your chicken in a frying pan with some olive oil, salt and pepper. Wait until the chicken has started to turn colour, then add the ginger and some flaked almonds. Whilst the chicken and other added ingredients are sizzling away, roughly chop your mushrooms (if you want to put them in), and add to the frying pan.


(I'm really sorry about the picture quality - I don't know what is going on!)



Step Two
When the chicken has started to turn golden brown, add your jar of korma sauce and stir. Then add your coconut milk.

(As you can see, my sauce looks a teenie bit light, which means I probably added too much coconut milk. I recommend adding a little bit of the milk at a time to keep an eye on the colour. My korma tasted fine, but any more milk and it would have been FAR too sweet...Bleurgh!)

Leave to simmer for about 10 minutes, stirring occasionally.

Step Three
Whilst your korma is simmering away, sprinkle your naan bread with a bit of water, the cinnamon and some fennel seeds. Cook it for 10 minutes (the same time as your korma needs to simmer), on Gas Mark 6/200 degrees Fahrenheit/400 degrees Celsius.


Step Four
After 10 minutes, take your korma off the heat, and the naan bread out the oven. Leave your korma to sit for a few minutes and stir to let the sauce thicken a little bit - you don't want it to be too runny...it makes SUCH a mess, and this is not good!!


Step Five
Serving time!!

Place your naan, and a couple of generous spoonfuls of korma on to a plate and sprinkle with a few more flaked almonds. Then, sit back, and stuff your face! hehe.

Now, this recipe makes a lot of chicken korma. I'd say it serves 3-4 people depending on how big your appetite is.

If, like me, you live by yourself, simply transfer the rest of your korma - once it has cooled down of course - in to a container and put it in the fridge. It should last you for at least another meal or two!

Yummy, and economical...

Cook with Ginger: Bacon and Asparagus Brunch

Bonjour Universe!

When I got back from work this morning, I had a severe craving for bacon, so I thought I'd throw together a quick bacon and asparagus brunch.

I don't really eat breakfast; when I get up it's too early for me to eat, and by the time I get home from my first stint at work of the day I'm usually in the mood for something more substantial.

And this bacon and asparagus salad really hit the spot today! It only took about 10 minutes to cook and it was b-e-a-utiful.

Nom nom!




To the salad I added some flaked almonds, and a few teaspoons of red onion chutney (and a vanilla hot chocolate as a warming beverage!)



Such a simple, throw-together dish that is perfect for a rainy mid-morning snack!

Cook with Ginger: Walnut, Goat's Cheese and Asparagus Slice

Good Evening Universe!!
I don't know about you, but sometimes when I get home from work I am just too tired to cook anything fancy or extravagant. Don't get me wrong, I love to cook...LOVE to cook, but sometimes, I just want to eat something quickly and then veg out on the sofa and watch Friends!

Does anybody feel like this too?

I had this the other night. I was really tired during the day, so decided that I would cook myself a savoury slice.

Savoury slices are SO easy to prepare and cook. I didn't really know how the flavours for my slice would taste together, so this one was a bit of an experiment...

But it turned out beautifully, so I thought I'd share it!





The beauty of this recipe is that you can use pretty much anything on your slice. The base is just a sheet of puff pastry, which you can pick up from most supermarkets. The topping is up to you! I used grated goat's cheese, asparagus spears and crushed walnuts on my slice. Goat's cheese is one of my favourite types of cheese...I nearly used a whole block for this!

I scored around the slice (about 1 inch away from the edge.) I then brushed the edge with milk to help it go golden.  I cooked my slice for 20 minutes on Gas Mark 5 (190 degrees Celsius/375 degrees Fahrenheit,) turning it half way through for even coverage...



After the slice came out I drizzled it with honey.

Then I ate some!!

How easy was that?!

It's a simple idea for those nights where you just want to flop down and relax and do nothing. Other toppings that I've tried that really work are:

Tomato, Basil and Mozzarella

Goat's Cheese, Red Onion, Bacon and Mushroom.

Go on...get creative!!
